I just don't know how in the hell they can chew it. I will probably need dental exam after the first bite.  worship.gif

They even said, it is so yummy while it's still warm and a bit has to be on the salty side.

Dried strips of buffalo skin are a popular side dish eaten with glutinous rice and spicy papaya salad in southern Laos

This vendor at Pakse's new market in Champasak district explains how it is made: strips of buffalo skin coated with salt and ground rice are left to dry in the open at the mercy of blazing sun. By the time they have dried, the strips are hard as nails.

To make them edible, the meat is grilled and pounded with a hammer until it turns soft and flaky. It is best eaten while still warm. The taste is yummy, if a bit on the salty side.

Most people put these jerky buffalo dried skin when making jaew bong or in orlarm soup.

i have seen these many times...sometimes there is still hair left on them!!! mmm mmmm good.....

Oh! If you haven't tasted it, you don't know what you're missing!

Raws: Hard and hairy!

Cook: Soft and golden! ( Soft here is relative term!!!)

Real Lao eat those! (at least LAO TAI)

I tried to cook it in open fire back in the 80's when I first came to U.S.

the fire truck showed up!! because of lot of smoke!!!

i have spent 110 days in Laos in the past two years and i have eaten many local foods..ant larva ... duck blood lap...many strange fishes and mystery meat galore,.i have even eaten buffalo jerky....but never the one with skin and hair...no one ever offered it to me...and i was not going to buy it on my own!!!


how did you find it in america??? lol!!!    i love Laos and its people.. i hope to go back again this year...

Judging by your name as old buff, you must have iron teeth too. I'd rather eat meat instead of chewing dried strips of buffalo skin and risk prematurely losing my teeth. Nonetheless, I must admit though our Lao folks are not quite picky when it comes to eating food but skillfully consuming them all from head to toe, meat to skin. I guess nothing would go waste. : -)

 Hammer to be crushed before I eat it. Now for easy chewing. But it delicious.
Curry is a delicious soup that soup called Lao is "kang keeLek."
